Ingredients

  • 8 large flour tortillas
  • 5 cups shredded mozzarella cheese divided
  • 2 tablespoons olive oil
  • 1 cup pizza sauce
  • ¼ cup parmesan cheese
  • 1 teaspoon dried oregano or basil
  • toppings as desired

Instructions

  • Preheat oven to 425°F by placing a baking sheet inside the oven while it is heating.
  • Place one tortilla on a cutting board. With olive oil, brush the tortilla. Flip and sprinkle ¼ cup of shredded mozzarella on top. Place a second tortilla on top to form a tortilla "sandwich.".
  • Slide tortilla-oiled side down-from cutting board onto preheated baking sheet. Bake about 4 to 5 minutes until bottom is light golden. Flip tortilla, brushing second side with oil, so browned side is up.
  • Spread ¼ cup of pizza sauce on the browned side of the tortilla. Sprinkle ¼ teaspoon of dried oregano or basil over the sauce.
  • Top with 1 cup of shredded mozzarella cheese and 1 tablespoon of shredded parmesan cheese. Place your favorite pizza toppings, such as pepperoni slices, sliced mushrooms, or any other desired toppings.
  • Place tortilla pizza under the broiler and continue baking another 4-5 minutes, until the bottom is browned. If needed, broil pizza for 1 minute.

Notes

Browning will be most extreme on the side of the pizza that sits against the pan; start out with a hot pan.
Add any desired toppings. Our personal favorites are pepperoni and mushroom. Precook the mushrooms-or other toppings containing a great deal of moisture-when adding to pizza.
